Swiss Cheese Toast

Okay, for a yummy change from the traditional cheese sandwich, you'll need to try this recipe! I do not like Swiss cheese, never have, so when my husband's aunt served this, I was very reluctant to try it, but I was starving. You see, seven years ago, my oldest son had just turned four, my middle son was about 20 months old, and my youngest was only four months old. Yes, life was hectic. Then, to make matters worse, my four-year-old managed to break his arm while jumping in a bounce house at a church festival. Who does that?

We got him to the children's hospital where we sat and sat. Poor kid. His arm swooped down in the center. It reminded me of playing with Silly Putty as a child. Remember how you could pull it apart and it would stretch, but the center would give way to gravity and sag down? That's what his forearm looked like. He was a trooper, and after a few hours, we were starving, so my husband's aunt, who lived very close to the hospital, brought us up these Swiss cheese toast slices. Honestly, had I not been so hungry, I might not have tried them, but I am oh so glad I did.

On occasion, after that night, my husband would make this toast for us, so this past summer, I asked him to teach me how. And, yes, they taste just as yummy even when you aren't starving from sitting in the ER for hours on end.

It looks yummy and simple, right? It is, and here is all you have to do to make it...

Ingredients:
6 large slices of sourdough bread
1 1/2 cup shredded Swiss cheese
1/2 tsp. minced garlic
3 Tbsp. mayonnaise
4 tsp. shredded (or finely chopped) onion
dash Worcestershire sauce
salt and pepper to taste

Mix all the ingredients in a medium sized bowl and spread over the sliced bread. Place on a baking sheet and broil for 10 minutes or until the cheese starts to bubble a little.

Like my broccoli sunflower seed salad that I love even though I don't care for broccoli, this recipe is based on another ingredient I normally don't like; however, something about mixing the Swiss cheese with all these other ingredients makes it taste delicious. I promise you that whether you are a Swiss cheese fan or not, you will love this recipe! We are making it tonight with shrimp bisque. YUM!!!

  1. Oh wow! This looks so yummy! And I can relate to the chaos of this story....I'm raising my two grandsons who who are 12 months apart and we spent many a night in the ER with their mother when she was young. She was super accident prone. Wish someone would have brought me these sandwiches. I can't wait to try them.
