Super Easy Crock Pot Chicken

Happy New Year! Do you have any New Year Resolutions for 2013? While I'm still aiming to work on these resolutions I created at the beginning of the school year, I also have the goal to finish up our family albums, and I will certainly be blogging about that goal soon. However, I have a few friends whose resolutions are to cook dinner more often, so I thought I'd help them out with a few easy recipes this month. Here's my first one... 

After all, we all have those days filled with work and errands and those evenings filled with meetings, practices, and games, so here is what I make on such occasions. In fact, it's in the crock pot as I type.



All you need are three ingredients, and these are things you can easily have on hand at all times. 
  • 4 Chicken breasts
  • 1 packet Italian seasoning
  • 1 can Cream of Chicken Soup 
That's it! Just dump your defrosted chicken breasts into the crock pot with the seasoning and soup. Add some salt, pepper, and garlic. Then leave it for the day. Seriously. In 8 hours, check your breasts to make sure they are done, and you are ready to serve with a couple quick sides. I plan on turning on my rice cooker (we use white Japanese rice) about 30 minutes before we need to eat. It's already filled with the rice, soaking in the water because that makes it extra moist. Then I'll serve some cut up veggies and fruit as my healthy sides, and we will be good to eat a sit-down meal between errands and football. That's so much better than running through a drive-thru, isn't it?
